IDAM Brings the Taste of Monaco with Chefs from Hotel de Paris  Celebrating Shared Visions of Excellence

Doha, Qatar -9 November 2025:  On 13 and 14 November, MICHELIN-starred fine dining restaurant IDAM by Alain Ducasse (IDAM) at the Museum of Islamic Art, will welcome Executive Chef Dominique Lory and Sous-Chef Guillaume Giuggia of Monte-Carlo Société des Bains de Mer’s Hôtel de Paris Monte-Carlo for a two-day, six-hands collaboration with IDAM Executive Chef Fabrice Rosso. Supported by Qatar Tourism, the event will bring together three chefs connected by shared mentorship under Chef Alain Ducasse and a common understanding of excellence.

Excellence takes many forms. At the Hôtel de Paris Monte-Carlo, it is expressed through heritage and precision, qualities that define Monaco’s most renowned establishment and the home of Chef Alain Ducasse’s first three-MICHELIN-starred restaurant. At IDAM, guided by Chef Rosso, excellence takes shape through inquiry and evolution, informed by his three years of mentorship under Chef Ducasse.

Chef Lory brings more than twenty-five years of experience alongside Chef Ducasse, including eleven at Le Louis XV - Alain Ducasse à l’Hôtel de Paris. His haute cuisine is guided by clarity and respect for the ingredient. Chef Giuggia, Sous-Chef of the one-MICHELIN-starred Le Grill, contributes the Riviera’s warmth. At IDAM, their approach meets Chef Rosso’s spirit of experimentation and preservation that constantly reimagines what fine dining can be.

The menu they have created together reflects this meeting of philosophies through dishes such as marinated gamberoni with saffron-scented chickpeas and wood-fired coastal fish finished with caviar and watercress. The meal concludes with a chocolate soufflé made with Alain Ducasse Manufacture chocolate; a homage to the shared heritage that connects the three chefs.

“When chefs come together, it is never about comparison,” says Chef Fabrice Rosso. “It is about recognising shared values.”

“At Hôtel de Paris Monte-Carlo, refinement is our tradition,” adds Chef Dominique Lory. “In Doha, we find dedication expressed through openness and reflection. This collaboration honours all three.”

For IDAM, the collaboration is part of an ongoing dialogue with the wider culinary world, inviting new perspectives while refining its own expression of excellence.
