Doha, Qatar – 16 April 2025: IDAM by Alain Ducasse (IDAM), the MICHELIN-starred fine dining restaurant at the Museum of Islamic Art, has successfully wrapped up A Taste of the Mediterranean, a three-day collaboration showcasing produce from the Italian coastal regions of Liguria and Sardinia with Executive Chefs from luxury travel specialists Belmond.
For over 45 years, Belmond has been synonymous with elegant, experience-driven travel for the most discerning, offering timeless glamour and exceptional service across some the of the world’s most breathtaking destinations, including the Italian Riviera.
Taking place over three days in April, the series of dining events saw IDAM’s Head Chef, Fabrice Rosso, join forces with Chefs Carrado Corti and Dario Parascandolo from Belmond’s Italian Portofino and Costa Smeralda properties, combining their passion for seasonal, regional produce. The lunch menu featured pizzetta topped with Mediterranean lobster, caper dust, Val d’Aveto stracchino cheese, tomato, and oregano fondant, with a refreshing bergamot, mascarpone, and basil dessert to follow.
Dinner started by highlighting flavours of the coast, with Tigullio shrimp tartar, caviar, and a rich Squilla lobster reduction alongside ricotta ravioli, which was followed with seared saddle of lamb, seasonal morels and fresh spring herbs.
“It was a joy to have the opportunity to cook alongside the exceptional chefs from Belmond,” said Chef Fabrice Rosso. “As passionate champions of their terroir, we share a deep respect for their region’s produce. It was a pleasure to share these extraordinary ingredients and Italian culinary tradition with our diners.”
The collaboration marked the latest in a number of culinary series’ showcasing IDAM’s access to the very best of the world’s finest seasonal ingredients, with recent events celebrating highly coveted premium produce including French caviar and forest truffles.
