Doha, Qatar -15 October 2025: IDAM by Alain Ducasse (IDAM) proudly announces a collaboration with one of the most celebrated figures in contemporary French cuisine: Chef Guillaume Galliot, Executive Chef at the three-MICHELIN-starred Caprice in Hong Kong. Taking place on 23 and 24 October, this exclusive two-day event will unite Chef Galliot with IDAM’s own Executive Chef Fabrice Rosso for a curated dining experience that will set a new benchmark for fine dining in Doha. Driven by a shared philosophy of innovation and infusing contemporary cuisine with global references, the chefs will present a menu that draws on the rich language of French gastronomy while featuring unmistakable influences from further afield. With a clear reverence for Asian culinary tradition, Galliot integrates elements including sudachi lime, timut pepper, laksa, and beef, transforming these distinct ingredients into bold expressions of flavour that challenge convention and reimagine modern European dining. “My cuisine is about emotion and storytelling,” says Chef Guillaume Galliot. “Collaborating with Chef Fabrice at IDAM is an exciting opportunity to explore our shared culinary heritage while creating something truly unique for diners in Doha.” “Chef Guillaume is one of the most inspiring chefs in our generation,” says Chef Fabrice Rosso, whose leadership at IDAM has earned the restaurant a MICHELIN Star. “Our collaboration is rooted in creativity and respect for the ingredients and cultures that shape our cooking. This event will be a dialogue between East and West, expressed through the language of French gastronomy.” The collaboration reflects IDAM’s ongoing mission to spotlight global talent and foster cross-cultural culinary exchange. Set in the iconic Museum of Islamic Art with panoramic views of Doha’s skyline, IDAM provides a striking backdrop for this landmark event.
